Our olives are of excellent quality: Nocellara del Belice and Cerasuola, harvested by hand. After careful selection, the harvest is done at the right degree of ripeness, and the olives are taken immediately to the mill for pressing, to avoid oxidation and so preserve all their sensory qualities.
